Cinnamon Rolls 3 cups scalded milk 3/4 cup sugar 6 Tbs. melted margerine 2 eggs 3 Tbs. yeast 1 cup mashed potatoes (I use instant) 1 tsp. salt flour until still a little sticky (about 1.5 cup) Combine milk, margerine, eggs, sugar, salt, and potatoes. When cool enough, add the yeast. Mix well. Add flour a little at a time. Dough should be slightly sticky or they will be dry cinnamon rolls. Let rise. Roll out. (I do half at a time) Spread with butter, brown sugar (or white) and cinnamon. May put on raisins, chocolate chips, or shredded apples. Roll up and cut with a string or thread. Put in pans. Let rise again. Bake in oven at 375 for 13-15 minutes or until nicely browned. Don't over-cook or they will be dry. Source: Olive Harwood
