1. Sort and wash bean soup mix in a colander under cold running water. 2. Place mix in a pan, cover with water and soak overnight. The next day, DRAIN and add 2 quarts of water. Add ham, ham hock, bacon, soup bone, or sausage. Bring to a boil and then simmer slowly for 2.5 to 3 hours. 3. Add the following: 1 large onion (chopped) 1 can tomatoes (15 oz) red pepper (optional) 1 teaspoon chili powder 2 tablespoons lemon juice 1 clove minced garlic (optional) salt & pepper to taste 4.
