Cow Foot and Beans 1 onion 1 green pepper 1 package of beef smoked sausage (pre cooked) 2 cans of light or dark red kidney beans Dice onion and green pepper. Slice sausage. Fry onions, peppers, and sausage together in a pan. About 5-10 minutes on medium to high. After well cooked, add beans (do not drain beans or meat mixture) and stir. Serve over rice. Makes 6-8 servings.
