Cheesy Potatoes
 
  • 8 medium Potatoes, boiled 15 minutes, cooled and shreded
  • Combine and Warm:
  • 1/2 cup butter
  • 1/3 cup evaporated milk
  • Salt to taste
  • Onion flakes
  • Add to potatoes mixture and 1 1/2 cup gratted cheese
  • crush 1 1/2 cup corn flakes and add 1/4 cup butter,  sprinkle on top
  • Bake 30 min @ 375

 

Cheesburger Soup
  • 1/2 pound ground beef
  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cup diced celery
  • 1 teaspoon dried basil
  • 4 teaspoons dried parsley flakes
  • 4 tablespoons butter or margarine, divided
  • 3 cups chicken broth
  • 4 cups diced peeled potatoes (1 3/4 pounds)
  • 1/4 cup all-purpose flour
  • 8 ounces process American cheese, cubed (2 cups)
  • 1 1/2 cups milk
  • 3/4 teaspoon salt
  • 1/4 to 1/2 teaspoon pepper
In a 3-qt saucepan, brown beef; drain and set aside.  In the same saucepan, saute onion, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes.  Add broth, potatoes and beef; bring to a boil.  Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.  Manwhile, in a small skillet, melt remaining butter.  Add flour; cook and stir for 3-5 minutes or until bubbly.  Add to soup; bring to a boil.  Cook and stir for 2 minutes.  Reduce heat to low.  Add cheese, milk, salt and pepper; cook and stir until cheese melts.  Remove from the heat.  Yield: 8 servings (2 1/4 quarts)

 

Chicken and Rice
Butter a 9 x 13 inch pan.  Srinkle 3/4 cup rice (uncooked) over bottom of pan.  Lay chicken pieces on rice (6-8 chicken breasts or 1 large chicken).  Pour over 2 cups water with 2 chicken boullon bubes dissolved in it.   Sprinkle over that, 1 envelope onion soup and 1 can  mushroom soup and 1 can of milk, mixed together.  Cover and bake 1 hour at 325.  Remove cover and cook 15-20 minutes longer.

 

Chicken Tortilla Bake
  • 3 cups shredded cooked chicken
  • 2 cans (4 ounces each) chopped green chilies
  • 1 cup chicken broth
  • 1 can (10 3/4 ounces) condensed cream of mushroom soup, undiluted
  • 1 can (10 3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 small onion, finely chopped
  • 12 corn (or flour) tortillas
  • 2 cups (8 ounces) shredded cheddar cheese, divided
In a bowl, combine the chicken, chilies, broth, soups, and onion; set aside.  Warm tortillas in the microwave according to package directions.   Layer half of the tortillas on the bottome of a greased 13 x 9 x 2 in. baking pan, cutting to fit pan if desired.  Top with half of the chicken mixture and half of the cheese.  Repeat layers.  Bake, uncovered, at 350 for 30 minutes. 
Yield: 6-8 servings.

 

Applesauce Banana Bread
  • 1 cup sugar
  • 1/2 cup banana
  • 1/2 cup oil
  • 2 eggs
  • 1 cup applesauce
  • 2 cups flour
  • 1 t baking soda
  • 1/4 t salt
  • 1/2 cup nuts

Bake at 350 for 1 hr

 

Ginger Snaps

  • 3/4 cup shortning
  • 1 egg
  • 1 cup sugar
  • 1 cup mollasas
  • 3 cups flour
  • 1/2 t salt
  • 1 t cloves
  • 2 t baking soda
  • 1 t cinnamon
  • 1 t ginger

Roll in ball and dip in sugar.  Bake at 375.

 

Applesauce Brownies

  • 1 cup oil
  • 2 cups sugar
  • 2 t vanilla
  • 4 eggs
  • 2/3 cup applesauce
  • 1/4 cup flour
  • 3 heaping T cocoa
  • 1 t salt
  • 1/2 t baking powder

Pour in well greased pan.  Bake at 325, 30-35 minutes.
** for best results top with both mint and chocolate frosting **

 

Rhubarb Cake

  • Fill 10x13 pan half full of cut Rhubarb
  • Sprinkle one package (3 oz) red jello over top
  • Sprinkle one cup sugar over top
  • Cover with layer of small marshmellows
  • Cover with a prepared cake mix

Cook 1 hour at 350 degrees

 

Blonde Brownies

  • 1/2 cup margarine
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 package choloate chips
Put in a sprayed 9x13 pan
Cook 20-25 minutes at 350 degrees

 

Granola

    Mix together in a large bowl

  • 5 c. oatmeal - quick is what I used
  • 3 c Rice Krispies
  • 2 c coconut
  • 2 T cinnamon
  • Mix and stir into cereals
  • 1 c maple syrup - of course the real thing tastes best
  • 1/2 c olive oil
  • 2t vanilla
  • Stir well
    Spread out in an even layer on a baking sheet - I use my jellyroll pan with higher sides.
    Bake 300 degrees for 30-45 minutes, turning granola about every 15 minutes
    Note: Melissa makes this and it takes her the full 45 min. I found mine got done faster
    than that. I did my batch on two cookie sheets.



Trail Mix

    Mix together in a large bowl:

  • 1 18 oz box Golden Grahams
  • 1 16 oz box Chex - I used rice only, but you can mix the flavors
  • 2 cups coconut
  • 1-2 cups nuts
  • 2 cups raisins, craisins, or other dried fruit pieces
  • In heavy sauce pan mix and bring to a full rolling bowl:
  • 1-1/4 c sugar
  • 1-1/4 c light karo syrup
  • 1 c butter, not margarine
Bring to a full boil and boil for 2 min. Pour over ingredients. Stir well
Can spread on cookie sheets to cool. Store in plastic bag or covered
bowl.
