In a 3-qt saucepan, brown beef; drain and set aside. In the same saucepan, saute onion, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. Manwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from the heat. Yield: 8 servings (2 1/4 quarts) |
| Chicken and Rice |
| Butter a 9 x 13 inch pan. Srinkle 3/4 cup rice (uncooked) over bottom of pan. Lay chicken pieces on rice (6-8 chicken breasts or 1 large chicken). Pour over 2 cups water with 2 chicken boullon bubes dissolved in it. Sprinkle over that, 1 envelope onion soup and 1 can mushroom soup and 1 can of milk, mixed together. Cover and bake 1 hour at 325. Remove cover and cook 15-20 minutes longer. |
| Chicken Tortilla Bake | |

In a
bowl, combine the chicken, chilies, broth, soups, and onion; set aside. Warm
tortillas in the microwave according to package directions. Layer half of the
tortillas on the bottome of a greased 13 x 9 x 2 in. baking pan, cutting to fit pan if
desired. Top with half of the chicken mixture and half of the cheese. Repeat
layers. Bake, uncovered, at 350 for 30 minutes. Yield: 6-8 servings. |
